- Ponemos los dátiles en remojo con agua caliente 30 minutos
- Trituramos los dátiles, ma avena y la canela hasta conseguir una masa pegajosa
- Compactamos la mezcla en la base de un molde engrasado y refrijeramos
- Vertemos el agua en una cazuela y cuando empiece a hervir añadimos el arroz y cocinamos a fuego medio hasta que el agua se evapore
- Una vez evaporado retiramos del fuego y reservamos
- En una cazuela incorporamos la leche, canela y las cáscaras
- Cuando la leche comience a hervir añadimos el arroz, bajamos el fuego para que la leche no hierva y removemos sin parar 30 minutos
- Retiramos la canela y las cáscaras y añadimos la fructosa. Removemos otros 20 minutos o hasta conseguir una textura cremosa y espesa
- En un bowl con agua fría hidratamos 4 láminas de gelatina 5 minutos. Las añadimos al arroz con leche y removemos hasta que se deshagan
- Sacamos el molde de la nevera, vertemos la mezcla y refrigeramos mínimo 4 horas
- Calentamos la mermelada en una cazuela y cuando este líquida retiramos del fuego
- Igual que antes hidratamos 2 láminas de gelatina, las ponemos en la mermelada y mezclamos bien. Dejamos atemperar 10 minutos
- Sacamos la tarta, añadimos la mermelada y refrigeramos 2 horas
- Desmoldar la tarta y decorara con frambuesas. Yo no lo hice porque cuando fui a comprar no quedaban.
